Honey Butter Lemon Chicken

Honey Butter Lemon Chicken is not only delicious, it’s also a fun and easy way to get the children involved in making dinner. It may get a little messy, but when kids are able to participate in creating a meal, they’re more likely to eat every last bite. 
Did we mention that the chicken is all oven fried? No standing over the stove waiting and watching for it to be done. Easy cleanup and and easy meal!

 

  • 1 package of boneless chicken thighs or 2  brined chicken breast
  • 2 cups of finely crushed seasoned bread crumbs or panko 
  • 2 large eggs
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 cup of flour
  • 1/2 cup of cornstarch
  • 1 teaspoon of onion powder
  • 1/4 cup of canola oil
  • 1/2 cup butter 
  • 3/4 cup of honey
  • 1/4 cup of finely diced spring onions
  • 1/4 teaspoon of salt and mix
  • Juice of 1/2 of a lemon
 
1. ) Clean and cut chicken into bite sized chunks and pat dry. Set aside.
2.) Pre-heat oven to 375 degrees. 
3.) Mix flour, cornstarch, 1/2 tsp of salt, pepper and onion powder in a medium bowl.  
4.) In a shallow bowl mix eggs and season it with salt and pepper mix. 
5.) Put crushed seasoned panko breadcrumbs in a medium sized bowl. 
6.) Toss the chicken in the flour mixture & hake off excess coating. Set aside for 10 minutes.  
7.) Pour canola oil onto a large sheet pan & place in the oven to heat up.
8.) Next, coat each chicken piece in egg mixture and then dredge through the crumb mix. 
9.)Place chicken on the heated sheet pan and back into the oven for 12- 15 minutes, until golden brown. 
10.) Heat the butter, honey and lemon juice in a medium heat sauce pan until fluid.
11.) Drizzle sauce over chicken and sprinkle with sea salt. Top with spring onions & enjoy!
